So you would like to be a brewer not just a consumer. What then do you need to know?

The basic ingredients of beer are water and a fermentable starch source such as malted barley. Most beer is fermented with a brewer’s yeast and flavoured with hops.

Steps in the brewing process include malting, milling, mashing, sparging, lautering, boiling, fermenting, conditioning, filtering and packaging. There are three main fermentation methods, warm, cool and spontaneous. Fermentation may take place in an open or closed fermenting vessel; a secondary fermentation may also occur in the cask or bottle.

Now you know it is a precise, delicate task best left to those skilled in the craft, maybe you will agree it’s easier to remain a simple consumer.

FORTITUDE BREWING COMPANY

The Fortitude Brewery is directly across the road from Amore B&B.

Brewery, Bar, Bistro, Cheese Shop. The Brewery is a must visit when on Tamborine Mountain.

The Brewery has a great selection of boutique beers including the Fortitude Brewing Company range of beers brewed onsite. You can order a pizza at the bar or a great selection of meals at the bistro.

Try a cheese platter from the award winning Witches Chase Cheese Company matched with a beer tasting paddle from the bar. There is a good selection of wines also available from the Heritage Wines brand at the cheese shop.

SCENIC RIM BREWERY

Scenic Rim Brewery & Cafe is a small family owned, Australian brewery located at Mt Alford in southeast Queensland’s Scenic Rim region. As the name suggests, the Scenic Rim is known for its natural assets. With fresh air, clear water and natural ingredients, we can’t think of a better place to brew beer.

Open Wednesday to Sunday, 10.00am to 5.00pm.

TAMBORINE MOUNTAIN DISTILLERY

Hidden away in the Gold Coast Hinterland, is the Tamborine Mountain Distillery. This is Australia’s smallest operating Pot Still Distillery, but of world renown, including in Europe, America, Canada, New Zealand and Asia.

With the Combination of rich red volcanic soils and fresh Spring Water, the abundant fruit of the Mountain is fermented and distilled.A small Pot Still is used to create the superb spirit which is the essence and foundation of Liqueurs, Schnapps, Vodka and Eaux de Vie.

Although Michael and Alla Ward’s Distillery has only been open a short time (July 1998) they have already established a very enviable reputation as creators of high quality liqueurs, vodkas, schnapps and eaux-de-vie. This reputation, largely developed by word of mouth, has seen people coming not only from all Australian states but America, Europe and Asia as well.

The Distillery’s products have won awards in America (Chicago, San Francisco) and Europe (London, Belgium, Germany, Austria).The incredible range of fruit that is grown on Tamborine Mountain is a wonderful resource for the Ward’s to draw from to produce their variety of Liqueurs and Schnapps. The Distillery also receives a considerable diversity of fruit from other growers which they turn into beautiful, smooth, Schnapps, Liqueurs, Fruit Brandy, Gins and Vodkas.

CASTLE GLEN DISTILLERY

Castle Glen DistilleryCastle Glen now has a range of quality spirits being produced at their distillery – finally a healthier alternative to the artificially flavoured and chemical-laden commercial brands.

They offer all of the usual types of spirits – Rum, Corn Spirit, Vodka, Gin and a sophisticated Mandarin Eau de Vie. They also have (amongst others) Absinthe, Yellow Strega (Yellow Galliano) and Apparg (Grappa) for the adventurous. The range of Eau de Vie’s are growing and our latest creations are Cherry Eau de Vie and Strawberry Eau de Vie. The Castle Glen Distillery range is 100% Natural of course!

They have a range of around 200 Liqueurs – all contained in beautiful bottles made specially for Castle Glen. There is a Liqueur to suit every person and the products are often bought as gifts. The Liqueurs with 24kt Gold are extra-special. Castle Glen’s Crème Liqueurs contain No Dairy, No Fat, and No Egg products. They are creamy to taste and their texture must be experienced to be believed.

Castle Glen Liqueurs are All Natural and Preservative Free with no nasty chemicals. Our Liqueurs have a shelf life of over 25 years once opened, and 5 years opened for the Crème Liqueur range.

FLINDERS PEAK

The Flinders Peak Winery located on the Ipswich Boonah Road at Peak Crossing is so much more than a winery. As well as producing their own wines on site, there is also a distillery producing a range of spirits including their famous flavoured Gin. Keep an eye out for their carrot vodka. Wine tastings and wine & spirit sales are available at the cellar door and weddings, functions and groups of all kinds can also be catered for.

BEARD AND BRAU

Beard & Brau is a Queensland boutique farmhouse brewery.

In 2012 Tanya and Chris moved from Adelaide (home of their previous brewery) to Tamborine, at the foot of Tamborine Mountain where they have since put their hearts and minds into constructing a brewery that uses locally grown ingredients in an environmentally friendly environment.

Featuring a range of six core beers, several experimental brews and many one-off seasonal releases, Beard & Brau highlight the use of local ingredients, from honey to orange blossom, tart mulberries to stinging nettles.

The beers, like the brewery’s name and logo, have a dog-related theme: Golden Paw, Red Tail, Black Snout and Bon Chiens farmhouse ale, for example, all in honour of their pet Schnauzers.
